At Premier Utilities, we believe great hospitality starts with intentional sourcing — not just for quality and freshness, but for the impact it creates. That’s why, across our cafés and restaurants, we prioritise suppliers within 50 km wherever possible.

From artisan relishes to fresh bread and coffee beans, local sourcing allows us to serve incredible food and drink — while supporting businesses that make our region stronger.

🔹 1. Fresh, Local, and Packed with Flavour

When your supplier is just down the road, ingredients arrive fresher, last longer, and taste better. In our restaurants and cafés, we’re proud to showcase some of the best local makers, including:

🥖 Hickey’s Bakery Sourdough – Delivered from the heart of Clonmel, this award-winning bread forms the base of many of our café plates. It’s rustic, real, and always crowd-pleasing.

🍅 Rívesci Smokey Tang – A bold, slow-cooked tomato relish made right here in Clonmel. You'll find it on signature dishes at Bodega 1830, where it adds richness and depth.

Old Barracks Coffee – Roasted in Birdhill, Co. Tipperary, just under 50 km from our café locations, this specialty coffee is a staple in our cafe — smooth, rich, and ethically sourced.

These aren’t just ingredients — they’re stories we’re proud to tell our customers.

🔹 2. Lean Logistics, Less Waste

Local suppliers reduce our reliance on long-haul deliveries and over-ordering. With smaller, more frequent deliveries, we get:

  • Lower transport costs
  • Fewer stock-outs
  • Less food waste
  • More control over quality

And when something’s just 10–20 km away, you’re not stuck waiting for a depot to open or a van to cross the country.

🔹 3. Cutting Carbon the Smart Way

Sourcing within 50 km reduces food miles, refrigerated transport, and overpackaging. It's one of the simplest — and most effective — ways to shrink our environmental footprint.

There’s no need to "offset" when you’re not creating unnecessary emissions in the first place.

🔹 4. Strengthening Local Business, One Order at a Time

Working with producers in Clonmel, Tipperary, and surrounding areas keeps money moving through the local economy — creating jobs and preserving craft traditions.

Instead of being one small account in a national supplier’s book, we become meaningful partners in a shared ecosystem.

🔹 5. Adding Meaning to the Guest Experience

When a customer asks, “Where’s this bread from?” — and the answer is "down the road", the connection is instant. People value transparency, origin, and community.

Menus become conversation starters. Our staff can proudly tell the stories behind every bite — and guests walk away with more than just a meal.

Final Thought: Local Isn’t Just a Trend — It’s a Standard

At Premier Utilities, we don’t source local for show — we do it because it works. It delivers on taste, cost, sustainability, and values. And when our food supports our neighbours, everybody benefits.

If you’re a local producer interested in partnering with one of our venues — let’s talk.
